Ebony was giddy with excitement and nerves when her new coffee shop opened on April 13.

Aptly named Sonder Coffee, (sonder meaning ‘the realisation that each random passerby is living a life as vivid and complex as your own’), is the perfect place for a spot of people watching.

“We have been planning to open a coffee shop for a while but when this building became available, we had to take it. It was in a bad condition but we saw so much potential in the space,” said café owner Ebony Paz.

With the help of friends and family, Ebony, her partner Ben Holden, and brother Harry Wroe have spent the past month renovating the space. Now, the building has been transformed into a modern but rustic coffee shop with exposed brick, lots of house plants and a variety of sunny spots in which to sit and enjoy a hot drink.

When restrictions allow, Sonder Coffee will have indoor seating on three levels and are hoping to use their sun-drenched top floor as either a co-working space or a studio for yoga classes.

“In May, we will have a bigger menu with savoury lunch items like toasties. We would also like to have more homemade bakes and an area to stock local produce.

“We are going to see what the people of Salisbury want and give it to them,” Ebony added.

Currently, the coffee shop offers a variety of hot drinks and a selection of yummy cakes and biscuits made by Salisbury baker Irresponsible Indulgence.

Sonder Coffee is open Monday-Saturday 8.30-4.30pm and Sundays 10-3.
